DIY popsicles

I was at World Market the other day, picking up a new light that I ordered, and I was browsing through their food aisles when I happened upon these visually pleasing sodas. The labels, the sleek bottles, the flavors….they all just sounded so delicious and I knew I needed to find a way to use them in a fun way. I went with the citrus flavors, and when I found the popsicle molds, the wheels in my head started turning! My girls have been begging to work in the kitchen with me a little more often, and this is the perfect treat to have them help me with.

I tried layering the drinks in the molds. Here’s where things went a little differently than I thought they would. I was imagining a layered rainbow ombre kind of look. I think it takes way more patience than I have to be able to accomplish that. Plus, I had Addie checking the popsicles every ten minutes to see if they were frozen already. Anyway, I started with the darkest of the drinks and filled the molds up about a third of the way full. Then I sliced up some oranges and peeled the rind off of them and then stuck them into the molds as well.

I put the mold in the freezer and let it freeze for a little while, and when it had sort of solidified (I told you, no patience, remember?!) I added the next flavor of juice to the first and filled it up until there was just about 1/3 of the mold still left. The problem with using this juice became clear to me at this point. It is carbonated, so the bubbles would leave little air pockets which makes the popsicle not at smooth. Also, because I didn’t wait long enough, the colors completely mixed together ruining the ombre effect I had been hoping for. The good news, however, is that it doesn’t affect the taste, which is delicious by the way!

To say that my girls were thrilled to eat popsicles that we had actually made ourselves would be an understatement. It makes me realize that I probably should have tried this out before now because it is such a simple thing to do. I think I have a better handle on it now and think that next time will be even better!
