Skinny Cafe Rio Dressing
My husband and I made the decision to start eating healthier a week and a half ago, and I have been trying to find recipes that are delicious and full of flavor while still being light on calories. One of my favorite things is Cafe Rio salads, but you’re looking at 1,000 calories or more if you eat it as served from the restaurant. If you use this skinny cafe rio dressing along with my sweet pork recipe from yesterday, a full salad will run you 350 calories or less! Seriously guys! You aren’t sacrificing anything flavor wise, so you might as well give this a try.
Ingredients
- 1/2 c lowfat buttermilk
- 1/4 c light mayo
- 1/4 c fat free greek yogurt
- 1 small jalapeno (remove seeds)
- 1/4 c fresh cilantro
- 1 tomatillo (husks removed and chopped up)
- 1 clove garlic
- juice of 1/2 lime
- 1/2 tsp dried parsley flakes
- 1/8 tsp cumin
- 1/4 tsp ground pepper
- 1/4 tsp salt
Instructions
- Chop up cilantro, jalapeno, garlic and tomatillo and then add all ingredients to the blender until combined.
This dressing is packed with flavor and is delicious! To make things easier, you can put the dressing in a squeezable bottle which makes storing it in the fridge a breeze.
Looks yummy and refreshing for a salad! I will have to give this a try!

Hi Dianne! The calorie count is about 43 calories for a 1/4 cup serving. So 2 TBS would be only 21 calories or so! You should definitely try it out!
