As a mom, I think it is easy to get overwhelmed with all of the things that I am “supposed” to be doing for my kids.  Are they going to bed on time?  Did I teach them well enough to be kind to other kids?  Have I done the laundry lately?  Am I giving them the right foods?  I recently learned about Intermountain Healthcare’s “Live Well” initiative which focuses primarily on getting kids the right kinds of foods specifically for lunch.  It can be overwhelming, at best, to try and get a lunch packed when they are late getting out the door, let alone make sure that it is a healthy lunch.  I was challenged to come up with 5 different lunches that are well balanced and kid friendly.  With Halloween coming up, I thought it would be fun to come up with 5 Halloween themed lunches, and let me tell you.  So far, they are a HUGE hit!

I wanted to include my oldest in the planning process of the meals as much as possible.  I figured if I could get her opinion of the things I was planning that she would be more likely to eat the things we planned.  We headed to the grocery store and I went through meal by meal with her.  It took a little longer in the grocery store than normal, but it was good for Lillie.  I even let her push one of the little mini carts around the store and at one point, she told me that she felt like a grown up.

Growing up, we always used the food pyramid for portions of each kind of food that we are supposed to have.  Did you know there is a new way to look at it now?  I love this visual.  Bento boxes are such a huge trend right now, and they are the perfect way to make sure that you are getting your child the nutrition that they need.  I used the Rubbermaid LunchBlox container, and it is amazing!  I love that the different pieces just snap into the ice pack making it so that everything stays nice and cool in the lunch box.

For our first meal, Lillie and I decided that we would make mummy pizzas.  They are so fun, and easy for the kids to help with too!  We used a whole grain english muffin for the base, then added marinara sauce.  Some of the pizzas have pepperoni on them.  I wanted to make that part as healthy as I could as well, so I got turkey pepperoni and my girls ate it up!  I wanted the cheese to be the thing on the top to make it look like mummy bandages, so the pepperoni went on first.  We used string cheese and just pulled parts off and put them on the pizza.  Last, we topped it with olive eyeballs and then they were ready to go!

I turned the oven on to 400 degrees and cooked the pizzas until the cheese was melted and started to brown.  To make the lunch a balanced lunch, I paired it with some pear slices, raspberries, and carrots.  It was fun and yummy!
