Monster Sandwich | Healthy Lunch Ideas

It’s day two of our healthy lunch ideas as part of the Intermountain Live Well initiative, and I have such an easy but fun idea for you to try for your next lunch box. These Monster Sandwiches were a BIG hit with my girls. They thought it was so funny that they were eating a monster face.
To make this the healthiest possible, you really should use a whole grain bread. I had an enriched white bread on hand, so that is what we used. I added turkey, cheese, lettuce and pickles to the sandwich and then once it was put together, I used a steak knife to cut the teeth. I then grabbed some olives (leftover from our mummy pizzas the day before) and some pickles cut into slices to make the face.
I packed peaches, strawberries, cottage cheese and some wheat Ritz crackers in the other spaces to finish off the lunch. The whole lunch was delicious and my girls loved it!
