Frankenstein chicken wraps

Can you tell that I have had a LOT of fun coming up with these themed lunches?!  I really have!  My girls have loved it too.  Not only are we having fun making lunches together, but they are actually eating all of their lunch every day!  I call that a mom win since I have made sure that each meal covers each food group.  This meal was one that I felt like patting myself on the back for.  I got my daughters to eat spinach.  Yes, you read that right.  Spinach.  The Frankenstein chicken wraps are made with spinach tortillas and my girls ate them like they were the best things on the planet!

For this lunch, I cut up some leftover chicken that I had made for dinner another night into strips and put it in the wrap with some shredded cheese.  It was like a chicken burrito because of the spices that I had on the chicken previously.  I folded it up and then cut some cheese to make hair, eyebrows and lips.  Last, I cut some olives for the eyes, and cut cheese and olives for the bolts at Frankenstein’s neck.  To attach the bolts, I used toothpicks.

paper1I served this lunch with some fresh watermelon slices and baby carrots.  Who knew that taking a little extra time to plan would make lunch time so much easier!  Every day, I had a list of everything that I was going to serve my kids that day.  I didn’t even have to think about it because I had put in the time beforehand.  It took the guesswork out of “what are we having for lunch today?” so that I could plan my time accordingly before my daughter had to go to school.  One thing that Intermountain Live Well has done that will help with the extra planning is they have made free printables for you to use!  I think they are so helpful!  You should go check them out and print them for yourself!
