Healthy Chocolate Peanut Butter Eggs{raw & vegan}. Gluten-free, Dairy-free | thekitchenmccabe.com

Are you a big fan of Chocolate Dipped Peanut Butter Eggs come spring time? I sure am.

I wanted a way to eat them and not feel guilty about the mass amounts of refined sugars that would be consumed. So I made my own! These healthy peanut butter chocolate eggs are gluten-free, dairy-free, refined sugar-free, raw, and vegan.

And they taste amazing. Just like the real thing, but less super-sugary.

If you don’t have the exact ingredients, don’t worry. You can still use your regular peanut butter, cocoa powder, and honey. They will still turn out great. Do try and find coconut flour, though. It makes the texture just right without having to add a bunch of powdered sugar in to achieve that result.

Raw Chocolate Coating:

Ingredients

  • 4 T. Raw Cacao Powder
  • 4 T. Coconut Oil
  • 2 T. Raw Honey

Instructions

  1. Place the cacao powder and coconut oil in a small, microwave safe bowl. Place in the microwave and heat JUST until the oil begins to melt slightly. You don't want it to be completely liquid, just runny enough to mix in with the cacao powder.
  2. Mix the cacao powder and coconut oil until well combined. Mix in the honey. Mixture should be liquid enough to use as a dipping chocolate, but not so runny that it pours off of a spoon. If it is too thick to use for dipping, place it back in the microwave for a few more seconds. If you accidentally over-do it, put the mixture in the fridge to chill. Stir every few minutes until it firms up to desired consistency.
  3. Use for coating peanut butter eggs. See peanut butter egg recipe for dipping instructions.
