Hello fantastic followers of Jonie’s awesome site!  It’s Kayley from The Kitchen McCabe I’m back today with something special.  Searching for a show-stopping dessert for your Thanksgiving feast?  Look no further. I bring you my all time favorite pie. The Queen of all citrus pies.

The Key Lime Mousse Pie

Buttery crisp shortbread crust topped with a tower of fluffy, light, tart mousse, with a layer of tangy key lime mousse on top of that?!

Ok.

I would like a slice now, please.

I have been making this pie for years and it never fails to impress.

It has definitely been my most requested dessert and I look forward to eating in every time.

It does take a fair amount of time to make, I will warn you, but the end results are far and beyond the effort exerted to make it.

I think I have it down to about a 6 hour total process now.

Here is the recipe for the Key lime Curd that I use in this pie. To get the rest of the recipe including the pie crust and topping, head on over to my blog.

Key Lime Mousse Pie

Ingredients

  • Key Lime Curd Recipe
  • 2 1/2 C. Sugar
  • 4 t. Cornstarch
  • 1 C. Key Lime Juice
  • 4 large Eggs
  • 4 large Egg Yolks
  • 3/4 C. Butter, cut into cubes

Instructions

  1. For the Curd:
  2. Place the 2 1/3 C. Sugar and the cornstarch in a large saucepan and mix.
  3. Add the 4 eggs and 4 egg yolks to the sugar and whisk well.
  4. Add the lime juice to the mixture and blend well.
  5. Add the cubed butter to the mixture and place over medium heat. Whisk constantly until the butter has melted and the mixture thickens and boils, about 10 minutes.
  6. Remove from heat and transfer to a medium bowl.
  7. Press plastic wrap into the top of the curd to prevent a skin from forming. Chill until cold( at least 6 hours).
