As I mentioned in my post yesterday, I wanted to show you another fun mix in variation that you can try with a basic vanilla ice cream recipe.  This one is an all time favorite.  You may wonder what my background in ice cream is, and some of you might be surprised that I have more then just eating ice cream to talk about.  I actually worked at Cold Stone Creamery for about 3 years when I was in high school and college.  When it comes to adding mix ins, I kind of know my way around this stuff.  Every day that I worked, I was allowed to take home ice cream.  We had so much fun coming up with delicious and new flavor combinations all the time, and this combination just so happens to be my most favorite combo of all!  Try it out and see what you think.  I like to call it the Toffee Lovers Dream.

Cake Batter Ice Cream

Begin with the other half of the vanilla ice cream base from yesterday, and add 3/4 cup of vanilla cake mix.  Blend it all together and pour it into the ice cream maker.  Now for the fun part.  Once it is almost finished mixing, add in these mix ins:

  • 5 Heath Bars Chopped
  • 1 Graham Cracker Pie crust
  • 1 Jar Mrs. Richardsen’s Caramel Topping

You will not be adding the full amount of the pie crust and caramel topping into the ice cream unless you want it to be overwhelmed with toppings.  Add the heath bar first and then put about 3/4 the pie crust into the ice cream.  Last, you will drizzle caramel into the ice cream while it mixes so that you can get ribbons or pockets of caramel throughout the whole thing.  Add it to your liking.  If you like a lot of caramel flavor, add lots, if not, be sparing.  You don’t want it to mix to long or else the caramel will just blend into the ice cream mix entirely.  Trust me.  It is much tastier to have a separation between caramel and cake batter so that you can taste both together.
